Olde Goa – Goan Rice
Goan red rice is an exquisite rice, specially milled to leave its distinctive red streaks.
Known as¬†Ukade Rice¬†in Indian gourmet circles, this thick grained rice has a uniquely firm texture with a slightly nutty taste, making an ideal accompaniment to¬†fish¬†and coconut based curries.
Cooking tip:¬†Put in cold water. Boil 5 cups of water per cup of rice, add rice when boiling. Simmer for 50 mins till rice is soft. Drain & Serve
