Sorpotel / Sorportel / Sarapatel is originally from Portugal and popular in Goa and Mangalore. Traditional ingredients include meat and offal, depending on region from pork to lamb and even beef.

The meat is parboiled, diced and sauteed then cooked in a spicy, vinegary sauce.

In India, Sorpotel is often served with sanna – a spongy, slightly sweet steamed rice and coconut bread.

Recipe:

Boil 500g pork (uncut) in 300ml water for 15 minutes.

Cut the pork into small cubes, and fry for 2 minutes.

Add 100g Sorportel Paste and 1 litre water and cook for 15 minutes.

Chef’s Tip: for traditional Goan Pork Sorportel , add 100g liver for extra flavour and texture.
